About this position
Doctoral researcher / PhD candidate position at the Technical University of Munich, embedded in the ZIEL – Institute for Food & Health and the Chair of Plant Proteins and Nutrition.
The project sits at the interface of food science, nutrition, and health, with a strong focus on how food processing changes the food matrix, digestion, nutrient release, and bioaccessibility. The work combines food technology, analytical chemistry, in vitro digestion models, and a human intervention study. The successful candidate will develop model foods, characterize food matrices and protein structure, study structure-function relationships, analyze digestion and nutrient release, and support dietary intervention studies.
Applicants should have an excellent Master's degree (or equivalent) in Food Technology, Nutritional Sciences, Food Chemistry, Biochemistry, Biotechnology, or a related field. The post also asks for strong interest in food structure, food processing, and human nutrition; enthusiasm for experimental laboratory and analytical work; an interest in digestion and health; a structured, independent working style; teamwork and communication skills; and very good English. Prior experience in food characterization, analytical methods, protein chemistry, food processing, or in vitro digestion models is helpful but not required.
Funding is a doctoral position at 65% TV-L E13, initially limited to three years. The role includes state-of-the-art lab infrastructure, close interdisciplinary mentoring, participation in international conferences, and enrollment in the TUM Graduate School.
