About this position

ETH Zürich and HES-SO Valais are jointly offering an 18-month postdoctoral research position in biotechnology of non-Saccharomyces yeast. The project is led by the Food Innovation and Process Design group at HES-SO Valais under Prof. Mishra and the Food Structure Engineering group at ETH Zürich under Prof. Rühs.

The research focuses on developing sustainable fermentation technologies for the production of non-alcoholic beer and wine without dealcoholization. The successful candidate will investigate the metabolism and physiology of non-Saccharomyces yeasts, with particular attention to respiratory metabolism, non-alcoholic fermentations, and the resulting impact on organoleptic quality. The role combines yeast biotechnology, biochemistry, bioprocess development, and industrial scale-up.

Responsibilities include conducting applied research on yeast metabolism in beer and wine, investigating biochemical mechanisms of respiratory metabolism, optimizing fermentation processes from laboratory through pilot and industrial scale, and collaborating with industrial partners from the brewing, wine, and biotechnology sectors.

The position requires a PhD in (Food)-Biotechnology, Bioprocess Engineering, or a closely related field with a focus on non-alcoholic wine and beer production using non-Saccharomyces yeast. Experience in aerobic and anaerobic fermentation, process development, scale-up, and fermentation engineering is expected. Applicants should be able to operate bioreactors from 1 L to 1000 L, have a strong scientific record, and bring an entrepreneurial mindset that supports translation of research into application. English fluency is required, together with B2 proficiency in either French or German.
